Mix olive oil, lemon juice, honey, minced garlic, salt, and herbs in a bowl.

Coat chicken thighs in the marinade. Refrigerate for at least 30 minutes (or up to overnight).

Preheat oven to 425°F (220°C). Arrange chicken on a sheet pan, skin side up.

Roast for 35-40 minutes until skin is golden and internal temp reaches 165°F.

Rest 5 minutes before serving. Spoon pan juices over the top.
