Peanut Noodles

Ingredients
Rice Noodles 12 oz
Peanut Butter ⅓ cup
Soy Sauce 3 tbsp
Sesame Oil 1 tbsp
Honey 2 tbsp
Instructions

Cook rice noodles according to package directions. Drain and rinse with cold water.

Whisk peanut butter, soy sauce, sesame oil, honey, rice vinegar, and sriracha until smooth.

Toss noodles with the peanut sauce until evenly coated.

Add shredded carrots, cucumber, edamame, and chopped scallions.

Garnish with crushed peanuts, sesame seeds, and lime wedges.
